Andie’s Mint Brownies, public version
4oz baker’s chocolate, coarsely chopped
1 cup butter, softened
2 cups sugar
4 eggs
1 cup all-purpose flour
1 tsp vanilla extract
1 ½ cups Andes mints baking chips
Microwave baker’s chocolate in microwave-safe bowl at MEDIUM (50 % power)1 ½ Min., stirring at 30 Sec. intervals until melted. Stir smooth.
Beat butter and sugar at MEDIUM speed with an electric mixer until light and fluffy. Add eggs, 1 at a time, beating just until blended. Add melted chocolate, beating just until blended. Add flour, beating at low speed just until blended. Stir in vanilla and Andes mints. Line 9×13 pan with foil. Spray with cooking spray.
Spread batter in pan. Bake at 350 for 35-40 Min. or until center is set. Cool completely.
